When you attend a BIG 10 university, the fall season is centered around football games. I had the good fortune to graduate from a BIG 10 school in Michigan! Every Saturday morning, I woke early, dressed from head to toe in my school colors, met up with friends and went to tailgates before the big game.
The best part, hands down, was all the parents who would set up tents and bring delicious food! My all-time favorites are nachos with all the fixings, and chili. These two foods inspired Fiesta Chicken Chili made with the Quik-Creations™ Butter Sauce. Here is the recipe:
Fiesta Chicken Chili Recipe:
1 (2 lb. bag) Quik-Creations™ Butter Sauce
2 (12.5 oz.) Chicken Breast, canned, or 3 Cups Cooked Chicken Breast
2 ½ Cups Cannellini (Great Northern) Beans, canned
1 ½ Cup Pepper Jack Cheese, shredded
1 ¼ Cup Medium Chunky Salsa
1 Cup Southwest Cheddar Blend, shredded
1 Cup Cream
½ Cup Water
1 Tablespoon Taco Seasoning
2 Teaspoons Onion Powder
2 Teaspoons Black Pepper
1 Teaspoon Cayenne Pepper
½ Teaspoon Granulated Garlic
½ Teaspoon Salt
Tortilla Strips or Crushed Tortilla Chips (Optional)
Directions: In a large pot, or crockpot, combine Quik-Creations™ Butter Sauce, cream and shredded
cheese over medium heat. Once the cheese is completely melted, add chicken and beans, stir, then add remainder of the ingredients. Simmer on low heat. Serve with Tortilla Strips or Crushed Tortilla Chips.
